Carrots are good for Vata and Kapha. They may provoke Pitta.
Pittas can add chopped cilantro to this dish and use sunflower oil to neutralize the warming nature of the carrots. Enjoy!
3 cups grated carrots, raw
1/2 cup raw peanuts
2 tbsp vegetable oil
salt and pepper, to taste (optional)
Warm 1 tbsp vegetable oil in a medium-hot skillet. Add the peanuts and roast for 3-4 minutes, stirring occasionally. Once roasted, pour them into a small bowl and toss with salt and pepper if you wish.
Add the second tbsp to the pan, and saute the grated carrots until soft, about five minutes. When finished, stir in the peanuts. Serves 3-4 people.
